
Barbecues, garden parties, seaside picnics – the season of outdoor eating is officially underway. And if you’re on “bring a dish” duty, we’ve got something that’ll impress, without the stress.
It’s seasonal, satisfying, and made using ingredients you can find all under one roof at the Jersey Markets.
This month, Polly from Molloy’s has shared one of her go-to recipes – a fresh, flavour-packed Jersey Royal, Radish & Smoked Mackerel Salad. It’s a twist on a classic potato salad that feels light but indulgent and works beautifully alongside grilled meats or as a showstopper side in its own right.
What You’ll Need:
Everything in this recipe can be picked up from our stalls apart from the greek yogurt:
- Jersey Royals – from our veg stalls (Molloy’s, J Nagle and Just William)
- Fresh radishes, garlic, lemon, and herbs – just steps away
- Smoked mackerel – head to our fishmongers Fin and Feather or Dun-Ross for the best
- Olive oil – Just William
- Lamb’s lettuce or any fresh salad leaves – easy to find in the market too
- Greek yogurt – from supermarket
How to Make It:
Serves: 4
Prep: 15 mins
Cook: 30 mins
- Roast the veg: Heat oven to 220C/200C/gas 7. Put 400g radishes, 500g halved Jersey Royals and 2 tbsp olive oil in a roasting tin. Toss together, season and roast for 30 minutes until tender.
- Make your dressing: Whisk 3 tbsp Greek yogurt, 3 tbsp olive oil, juice of 1 lemon, 1 small garlic clove, small bunch of chopped dill, and a pinch of seasoning.
- Combine: Once cooled slightly, toss the roasted veg with the dressing, fold in your 150g lamb’s lettuce and 300g flaked smoked mackerel. That’s it!
